1. Gbegiri, ewedu and soup
The originator of soup mixtures. It is also recognized internationally. Let us begin by honouring those who deserve it.

How to make Gbegiri:
Ingredients
Serves 4
¼ cup red palm oil
1 small onion, chopped
1 Scotch bonnet pepper, stemmed
4 garlic cloves
1 (1-inch) piece of ginger, scrubbed
1 Tbsp. ground dried crayfish
2 cups dried peeled beans (see note), such as honey beans, black-eyed peas, or peeled mung beans, rinsed and drained
Preparation
Step 1
In a medium saucepan, heat the oil over medium heat. Sauté the onion until transparent. Combine the Scotch bonnet pepper, garlic, ginger, and crayfish. Sauté until aromatic, about 2 minutes. Add the peeled beans and enough water to reach 2 inches above the top. Stir and bring to a boil over high heat, then lower to a simmer.
Step 2
Cook until the beans are totally soft and breaking apart in the sauce, adding more water as needed—it should resemble a chunky soup by this time. Remove from the heat and let cool slightly. Transfer the soup to a blender and purée with 1 cup of water until smooth. Return the soup to the stove. Serve immediately, or keep heated on low heat.
Cooks’ note:
For unpeeled beans, soak for 4-12 hours before cooking. Peel the beans by sliding them together with both hands. The skins should float to the surface of the liquid, where you may pour them off and discard. Repeat the process until the beans are mostly skinned.
Beans can be purchased peeled, but if you can’t find them or don’t want to peel your beans ahead of time, you may always pour the puréed bean combination through a fine strainer.

2. Efo riro and soup or stew.
We believe this is a Yoruba combo. Cooking efo riro and making soup/stew separately before serving both. It imparts a fresh flavor that pairs well with swallow or rice.

Ingredients
1 medium onion, quartered through root end
3 plum tomatoes, quartered
1 red bell pepper, ribs and seeds removed, cut into large pieces
1 Scotch bonnet or habanero chile
4 garlic cloves
2 Tbsp. dried bitter leaf
4 skinless tilapia or other whitefish fillets (about 1⅔lb. total), cut into 2″ pieces
4 tsp. Old Bay seasoning
Vegetable oil (for frying; about 1 cup)
2 Tbsp. extra-virgin olive oil (tbsp = Table Spoon)
2 Tbsp. double-concentrated tomato paste
2 tsp. dried thyme
1½ tsp. garam masala
½ tsp. ground turmeric
1 cube Maggi shrimp or chicken bouillon
3 Tbsp. dried shrimp, rinsed
4 tsp. powdered irú (dawadawa; fermented locust beans)
1 lb. (2 bunches) kale, ribs and stems removed, leaves torn into 2″ pieces
Steamed puna yams or rice (for serving)
Preparation
Step 1
Blend onion, tomatoes, bell pepper, chile, and garlic until smooth. Add up to ¼ cup water if necessary. Set the purée aside.
Step 2
Place the bitter leaf in a small basin and cover with boiling water. Allow to soften for about 10 minutes. Drain and finely chop.
Step 3
Meanwhile, coat the fish evenly with Old Bay seasoning in a big basin. Heat vegetable oil in a big deep pot or medium Dutch oven on medium-high until shimmering. Working in batches, put the fish in a single layer and fry, flipping halfway through, until golden, about 6-8 minutes. With a slotted spoon, transfer to paper towels to drain.
Step 4
Pour the oil out of the pan and wipe it clean. Heat the olive oil in the same saucepan over medium-high heat. Combine tomato paste, thyme, garam spice, and turmeric. Cook, stirring, until the spices are fragrant and the tomato paste has darkened slightly, about 1 minute. Stir in leftover purée, scraping up any browned pieces. Add bitter leaf, shrimp cube, dried shrimp, and irú. Bring to a boil. Reduce heat to a simmer, then add the kale by the handful, stirring to wilt before adding more. Cook, without stirring, until the kale is soft, which should take around 5 minutes. Gently fold in the fried fish, taking care not to break it up too much.
Step 5
Serve with Eba, Semolina, Rice or Yams

This is best relished when made from scratch, with ugu included. Both soups contribute their own flavors and combine to create a truly distinct taste.

Ogbono Okra Soup is a popular Nigerian soup made from African Mango Seeds (Ogbono). Ogbono Okra soup is just Ogbono soup with okra added. I already have a recipe for Ogbono soup on my site; click HERE to see it.
This Ogbono Soup with Okra dish is quite basic and straightforward. Let’s begin.
Ingredients:
300 grams Assorted meats Stripes (Ponmo, Shaki, Bokoto, Beef, Goat meat and more of your choice)
1 cup Ogbono seeds
15-20 Pieces Of Okra
2 Cooking Spoons Palm Oil
1 Cup Ugu, Spinach or Uziza leaves
3 Tablespoons Crayfish
1/2 cup Smoked and Fresh Prawns(optional)
1-2 Pieces Smoked Catfish
1-2 Pieces Dried Stockfish
2 Scotch Bonnet(Atarodo) Choppedor blended OR 1 Tablespoon Dry Ground Pepper
1 Medium Onion Chopped
3 Bouillon Cubes (I’m using two Knorr cubes and 1 Maggi crayfish)
Add salt o.
Preparation: Grate or mix half of the okra and cut the remainder with a knife. You may do either with all of the okra. Finely ground the Ogbono seeds and keep aside.
Ogbono okra.
Set a large saucepan on a medium heat, add the tough meats (in this example, the Shaki, Cow leg, and Ponmo), the sliced onions, and season to taste. Cover and simmer on low heat for 20 minutes. This helps to release the meat’s natural juices. After twenty minutes, add enough water to cover the meats, cover, and simmer until cooked (not soft). This should take around half an hour, and you can cut time by using a pressure cooker. When tender, add softer meats, such as goat meat, and stock fish. Cook until the meats are mushy.
Obono okra
If you do not add any water, you should have at least 4 cups of stock remaining after the meats and fish have softened. Set the heat to low to medium at this time. If you are using smoked fish, shred it and add it to the broth, along with the smoked or fresh shrimp. Add the blended or chopped Scotch bonnet or crushed pepper, followed by the Palm oil. Allow to boil for 3-5 minutes to fully infuse the oil into the stock.
Add the Ogbono gradually and stir until thoroughly resolved (the soup should start to draw at this point).
Combine thoroughly and let sit for 2 minutes. Taste for salt and seasoning, and adjust as needed.
Add the blended Okra and mix briskly.
Then, chop and wash the spinach/ugu/uziza leaves.
Now, add the chopped Okra.

Stir and blend, then add the remaining Crayfish. Turn off the heat and let it boil for 5 minutes with residual heat…
