Please keep in mind that very rich chicken or beef stock is required to make a really tasty Nigerian Fried Rice. Your stock must be well seasoned because the outcome of the Fried rice is heavily reliant on the richness of the stock. If you don’t have beef or chicken stock, try my Coconut Fried Rice recipe, which involves marinating raw chicken, frying it, and then mixing the juice into your rice to make chicken stock.
Also, when making Fried Rice, try to use as many fresh vegetables as possible, even if they are only carrots. Fresh and sweet carrots provide a lot of sweetness; furthermore, if you’re thinking of incorporating sweet corn, make sure it’s sweetcorn rather than plain raw corn.
